Instructions
  1. Place broccolini & asparagus into a pot with a tight fitted lid and 1 cup of water
  2. Place lid on and steam for 5 minutes until tender
  3. Plunge steamed veg in ice cold water to refresh
  4. Roughly chop gem lettuce and scatter over serving plate
  5. Sprinkle the lettuce with almonds, goji berries, blueberries, pumpkin seeds & sunflower seeds
  6. Add the refreshed vegetables
  7. Scoop chunks of the cooled pumpkin evenly over the salad
  8. Sprinkle the cooked quinoa over the salad

Variations Instead of broccolini use florets of a broccoli If pumpkin is not in season use sweet potato Instead of gem lettuce use any lettuce available Instead of almonds try cashews or walnuts Notes Wrap pumpkin in tin foil and roast in an oven at 200oc for 20 minutes Place 1 cup (135g) of quinoa to 2 cups (500ml) of water to boil, once boiling at the lid and allow to simmer slowly for 15 minutes until the grain has absorbed all the water Wash broccolini Rinse blueberries Ideally soak almonds for 8 hours or overnight for better digestion
