I often serve with a side of extra greens steamed but this is also nice with quinoa or steamed brown rice!
- Instead of broccoli choose whatever dark leafy greens you have
- Add carrots, sweet potato or pumpkin for a more substantial meal
- Add chickpeas & apricots for a Moroccan twist
- Replace the coconut milk with a cup of red wine for a french twist
- Replace the coconut milk for a cup of water and add chorizo for a Spanish twist
