  1. Rinse the chicken in lemon juice or apple cider vinegar
  2. Marinate with 1/2 the curry paste
  3. Place in a shallow frying pan with the heated coconut oil
  4. Fry on one side until turning golden then turn to the other side for the same colouring
  5. Add onion and fry for another 3 minutes
  6. Once golden on both sides add tinned tomato & coconut milk
  7. Stir in the remaining curry paste
  8. Add the chopped broccoli and bring to simmer
  9. After 5 minutes take off the heat to serve
Recipe Notes

I often serve with a side of extra greens steamed but this is also nice with quinoa or steamed brown rice!

Variations

  • Instead of broccoli choose whatever dark leafy greens you have
  • Add carrots, sweet potato or pumpkin for a more substantial meal
  • Add chickpeas & apricots for a Moroccan twist
  • Replace the coconut milk with a cup of red wine for a french twist
  • Replace the coconut milk for a cup of water and add chorizo for a Spanish twist
