Instructions
  1. Wash the turmeric and galangal and slice thinly
  2. Wash the turmeric and galangal and slice thinly
  3. Place in a large pot with the water and bring to a boil
  4. Once boiling turn to low and keep at a bare simmer until reduced by ½ (approx. 1 hour)
  5. Strain through a fine mesh strainer into a container
  6. Stir in the remaining ingredients
  7. Taste then add more tamarind or coconut sugar depending on how sweet or sour you would like your Jamu
  8. Freshest if consumed within 1 week
Recipe Notes

If you can’t find Tamarind paste - just buy the pulp and mix it with enough water to make a paste.

If you do not have tamarind you can replace it with 2 Tbsp lime juice
