Instructions
  1. Combine all in a food processor using only half the cup of dates (see recipe notes on the dates) and start to blend on lowest setting
  2. Add the remaining dates one by one until the mixture starts to assemble to cookie dough
  3. Stop when you have a chunky but sticky dough mixture, around 30-60 seconds
  4. Take lumps at a time and shape to 85g sized balls
Recipe Notes

When using dates if not Medjool dates they need pre-soaking in hot water for 5 minutes to soften

This recipe you can swap the dates for tahini for a low GI savoury binder

I also swap the goji berries to dried cherries or blueberries sometimes

 

Store in fridge for up to one week
