  1. Grease a muffin tin with the oil
  2. Break the eggs into a jug and whisk
  3. Cut small pieces of the bacon rashers evenly across each muffin hole
  4. Chop cleaned mushrooms and sprinkle evenly across each muffin hole
  5. Evenly pour the whisked egg mixture across each muffin hole
  6. Place in the preheated oven for 12-15 minutes
  7. Remove from the oven and using a wooden spoon or spatula, gently slide around the edge of the eggs to remove from tin
Recipe Notes

Variations:

  • Add bell peppers into the egg mix
  • Use a good quality sausage mix and chop pieces into the mix
  • For vegetarian option replace the bacon with spinach
  • Add cayenne pepper, paprika or mixed herbs as other flavours
  • Notes Bacon and sausages are quite processed really, so really consider buying a very good quality produce from your butcher
